I love sharing appetizers and making a meal out of it. You get a nice sample of everything to taste. The last couple of weeks I’ve been making greek appetizers from hummus to tzatziki to tabouleh (with both quinoa and buckwheat) accompanied by marinated olives, feta cheese, and speck I purchased from Whole Foods and Borough Market, along with some pita bread I crisped up.
Mediterranean Lunch: Tabelouh over a bed of spinach, marinated olives, speck, feta cheese, toasted pita chips
Mediterranean Lunch two: Tzatziki, toasted pita bread, marinated olive, greek salad with a drizzle of truffle balsamic vinegar, tabelouh, and hummus
For recipes: I just googled the recipes and took a couple of different recipes and combined them together to what I liked. Thats the joy in cooking… making it your own. 🙂
